This loaf is buttery, fluffy, just sweet enough, and so quick to come together.
We ended up with a weird custard layer with a nice cornmeal loaf on the bottom. Not sure what we did wrong...Oh no, sorry to hear that! I'm not sure how or why that happened...but I'll do some digging and let you know if I land on anything.My guess is that the egg and buttermilk weren't mixed into the batter adequately enough. I whisked the heck out of the egg/milk/butter before combining with the sugars and then whisked some more.
I felt like it was overkill when I was finished eating and all I felt in and around my mouth was oil; sorta like eating at a fast food place. Also, the cornbread was too sweet for my liking. I might try it again, but there are other cornbread recipes around here that I prefer.I made this tonight and was a bit concerned about the amount of sugar but I'm happy to say this isn't too sweet.

New-Fashioned Chocolate Chip Cookies With All Tahini & No Butter Recipe on Food52Earlier this summer, I was chatting with Lisa Mendelson—one of the owners of Seed & Mill, a tiny tahini haven in Chelsea Market—when she said something shocking: “I don’t use butter anymore.” We were talking about tahini-obsessed desserts, a category we here at Food52 are verrrrry familiar with: We mix tahini into cake batter. We spread it inside tarts. We use it instead of peanut butter. But using it instead of butter, like a 1:1 substitution? Does that actually work? “Yes!” Mendelson told me. “That’s how I make chocolate chip cookies.” If you’ve hung out in our Genius Recipes column before, you may be friendly with Danielle Oron’s salted tahini chocolate chip cookies, originally published in Modern Israeli Cooking. Our Genius leader Kristen Miglore describes the recipe as such: “You’re still following the exact same process—and nearly the same ingredients—as the steps you grew up reading off the back of the bag of chocolate chips.” But, “along with the softened butter and sugar, you’ll add a half cup of tahini.” Mendelson’s approach skips the butter altogether. Which, between you and me, I was skeptical of (sorry, Lisa!). So I went home and tried it myself. At first, the dough was stiff to scoop and stubborn in the oven, not melting and spreading as much as the Tollhouse chocolate chip cookies of my childhood. A little water fixed all this: I added a splash to the dough and flattened the cookie scoops with damp fingers. Like all crispy-chewy cookies, these notice every minute that they’re in the oven. Between 8 and 11 minutes, you go from an ultra-gooey center to something slightly cakier and more golden brown. Start by baking a few test cookies to find which one is right for you. Or go super simple with salt and pepper? Should I roast high and fast or low and slow? Truss? Spatchcock? Sear first on the stovetop? Just order pizza? At some point, these questions are not a productive way to get dinner on the table. As much as I adore roasted chicken, I realized a while back that I was roasting fewer birds because of my tendency to overthink every single detail. To get back to weekly roast chicken dinners, I needed a preparation so simple, foolproof, and flexible that I’d turn to it again and again without second-guessing anything. I found that preparation in this buttermilk roast chicken. It relies on a super-simple brine: 1 cup buttermilk, 1 cup pickle juice, 1 teaspoon salt. It’s so easy to remember; I can have a chicken soaking in the brine and all of the mess cleaned up in the time it typically takes me to find my phone to look up a recipe. From there, I like to rub a little olive oil on the chicken, then give it a blast of high heat. I haven’t found a better, simpler way to get a beautifully bronzed, crackly-skinned, well-seasoned bird every time. The Nordic Baking Book's Kladdkaka (Swedish Gooey Chocolate Cake) Recipe on Food52Kladdkaka—or Swedish Gooey Chocolate Cake—is a home cook's dream. It's five ingredients, plus a pinch of salt and some breadcrumbs to line the pan (which, in a bind, you could skip in lieu of just butter). The cake batter comes together in just one pot in roughly five minutes, or as long as it takes you to melt chocolate and butter, then stir in some dry ingredients. It cooks for about 15 minutes meaning, all-in, you're never more than a half-an-hour out from a warm, fudgy slice of it. And according to Michelin star-winning chef Magnus Nilsson, who estimates that he eats kladdkaka roughly once a month, it always turns out way better at home than it would in a professional kitchen. 'It only works well in the home,' he says. 'It doesn’t function well in bakeries, because they want to do it too well—that’s not the point. This whole cake is like the polar opposite of a cake in the traditional meaning. It’s unleavened, and under-baked—all the things that are problematic with a normal cake.' Nilsson is a Swedish chef whose restaurant Fäviken has received abundant praise for its innovative Nordic cuisine, which uses locally sourced ingredients. In his newly published The Nordic Baking Book, a compendium of regional baking recipes, Nilsson speculates as to the origin-story of kladdkaka, which started to appear in Swedish cookbooks and magazines in the mid-1970s.
