Lunch is just around the corner! Dig into this flavorful curry ramen.
Press the tofu with several layers of paper towel to remove as much water as possible. Cut the tofu into ½-inch slabs and press with paper towels again. Alternatively, you can dice the tofu into 1-inch cubes.
To prepare the marinade, first combine the soy sauce and coconut sugar in a small mixing bowl. Microwave in 15-second intervals, stirring in between, until the coconut sugar dissolves. This should take less than a minute. Add the lime juice and fresh ginger. Whisk to combine. Transfer the tofu to a shallow baking dish and pour in the marinade. Move the pieces around so each is completely coated. Cover and place in the fridge for at least an hours, flipping the pieces over and recovering with the marinade half way through.Remove the tofu from the marinade and press with paper towels to remove excess marinade.Add panko, cornstarch and sesame seeds to tofu. Toss gently until coated and pour out onto your prepared baking sheet.Bring water to a boil over medium heat.
Remove noodles and vegetables from heat. Add curry paste, coconut cream and soy sauce to taste. Add baked tofu just before serving.

Spicy Apple Cider Margarita Recipe on Food52The margarita has always been my go-to summer drink, but this year I'm making it my fall drink, too, with five autumnal takes on the classic cocktail. In this version, inspired by Cookie & Kate's Spiced Apple Margarita, I swapped some of the lime juice for apple cider—a quintessentially fall beverage—and kicked things up a notch with a healthy pinch of cayenne and cinnamon. The result is a sweet, spicy, and decidedly seasonal libation you might just like more than the original. A few notes on making it at home: I prefer mine with reposado tequila, but it's just as good with blanco. In the ingredients list, I'm slightly conservative with the spice level, because your drink will get spicier the longer it sits. Like it really spicy? Add an extra pinch of cayenne, or consider adding a few pinches of cayenne and cinnamon sticks to your tequila the night before. This recipe is featured in the article, 5 Margarita Recipes Perfect for Fall, sponsored by Agave In The Raw.
