When a train arrived in the station to drop off passengers or pick them up, they were met by the smells wafting through the open train windows of fried chicken and other baked goods that Black women carried in baskets on their heads.

“I won’t separate from my culture,” she says. “Black chefs are rare and can tell the story now and can change the narrative.”
