Just when you think you might know all about Lancashire foods, another long-lost delicacy rears its head.

According to the Stalmine Church where the tosset is said to originate, the cakes came from an old festival that took place annually before the First World War. As compiled by Bevan Ridehalgh for the Church, it was commonplace for these places of worship to "renew the rush coverings on their earthen floor", in a festival that took place for one day a year.
