Ad Maiora is a must try for all bread and Italian food lovers, writes the M.E.N's Ben Ashurst
I’m a firm believer of the phrase ‘less is more’, especially when it comes to food. Throwing everything at a dish is a huge red flag for me as it can ruin a perfectly good meal, so when I saw 'The Beast' sandwich at Ad Maiora I thought it was flavour overkill for the sake of shock value and a good insta pic.Ad Maiora is the brainchild of Sardinian couple Daniela Steri and Enrico Pinna who run their little business out of their flat in Manchester's Northern Quarter.
Enrico, the mastermind behind the butty, mixes up the ingredients with each order - so I had absolutely no idea what I was in for. Despite him freestyling the makeup of the dish, watching Enrico create my soon to be devoured meal was like watching Michelangelo at work sculpting the statue of David. After completion, I kindly asked Enrico to cut 'The Beast' in half due to the enormity of what I was soon to attempt to finish. As stated previously, I was nervous to give the dish a try due to how many different tastes were piled into it.
I simply couldn’t get enough of this magnificent butty. The bread was crunchy, the cheese was light, and the array of meats were a perfect combination of smoky and vibrant twangs. But the star of the show had to be the pesto, which offered a subtle yet necessary flavour, and acted as the glue that seemed to hold everything together. Bravo.
