Indoor dining is coming back on September 30 in New York. Here’s how restaurants are safely, and creatively, planning to open their doors again.

Short Stories, once best known for its late-night dance parties, is investing in elevated cuisine with a new chef.When they reopen indoor dining, here’s how they want to do it: “Recently, we’ve all had these incredible small dinners at friend’s homes. Why not recreate a similar vibe here by offering private dinners for 15-person groups? Why not make a really cool, safe space for someone in a way you can’t really do elsewhere...
Essentially, they want indoors to be an event space. They reason that instead of offering seating for, say, 10 two-person groups—all unrelated parties that require different forms and six-feet-apart spacing—it will be a better, and safer, experience, if it’s entirely reserved for a larger pod of family or friends. They’ll provide a dedicated waitstaff, a customized menu and cocktails, and even, muses Deshmukh, perhaps a surprise performer.
Of course, all these grand plans could fade away at any moment: the city “will reassess” if COVID-19 infection rates hit 2 percent. Which very well could happen: in California, Governor Newsom shut indoor dining down in July after previously reopening.
