San Antonio’s Esquire Tavern owner Chris Hill and a former Uchi executive are opening the restaurant above Hugman’s Oasis tiki bar.

Hugman’s owner Chris Hill, whose properties include The Esquire Tavern on the River Walk, is opening a new Japanese bar and restaurant called Tokyo Cowboy, in collaboration with Ben Cachila, formerly an executive with the renowned Austin sushi bar Uchi and its parent company Hai Hospitality.

Promoted as a “Japanese whisky diner,” Tokyo Cowboy is scheduled to open April 29 in the street-level space in the renovated Witte building on East Commerce Street, on the same city block as The Esquire and Canopy by Hilton San Antonio Riverwalk hotel, another Hill development.Cassandra Klepac The menu will feature Japanese-inspired plates, including brisket egg rolls, chicken chile dumplings, sushi handroll tacos, crispy pork chops and dashi corn waffles with shrimp and pork belly. The bar will pour a variety of Japanese whiskies, along with cocktails, including a Togorashi smoked Manhattan, Boozy Thai Tea, yuzu margaritas and highballs, along with wine and Japanese beer.

Tokyo Cowboy will be open from 4 to 10 p.m. Sunday through Thursday and 4 p.m. to midnight Friday and Saturday.
