Emma Louise Connolly’s Classic Blueberry pancake recipe: "A classic - blueberry pancakes. If you don't have buttermilk, use 120ml of milk and 1tbsp of vinegar. Set aside for five mins and use to replace the buttermilk below. These pancakes are so fluffy and soft, made extra delicious with blueberries, a drizzle of syrup and a flurry of icing sugar. Enjoy.
