This sandwich is substantial, an entire meal all in one sandwich.

If using, make the caponata below, then heat the oven to 200° F degrees. Add the basil, parsley, garlic, pine nuts, and 1/4 cup cheese to the food processor and pulse until it's a fine grind. With the processor on, add the olive oil through the feeding tube and, once emulsified, stop the processor, and season with salt and pepper to taste. Spoon into a bowl and set aside.

Coat a skillet with a generous amount of olive oil and heat over a medium-high flame. Mix 1 cup of Parmigiano and the panko together, place in a shallow bowl , and season with salt and pepper. Beat your eggs. Dip the chicken first in the egg and then in the panko-cheese mixture. Fry until golden brown on both sides and cooked through. When done, remove to cooling rack set over a sheet pan, and place in the 200° F oven so they will stay warm.

Heat the broiler, spread the pesto on both sides of the bread that has been sliced in half. Place under the broiler until it becomes lightly browned, only about a minute. Or, alternately, you can use a skillet or grill pan.Preheat oven to 450° F. Clean the eggplant, cut the tops off, and cut them in half lengthwise. On a baking sheet lined with aluminum foil, brush a little olive oil, place your eggplant cut side down, and bake for 15 minutes. Remove from the oven and set aside to cool.

Set a fry pan over medium-high flame, coat the bottom with olive oil, add your chopped onion, and cook until translucent. Add the chopped celery and red bell pepper, and continue cooking until they are soft and have started to caramelize. Add your minced garlic and cook for a minute or so. Don't let the garlic brown. Add your eggplant, tomato, Peppadews, capers, olives, crushed red pepper, sugar, and vinegar, and continue cooking until the mixture is thick.

Balsamic Chicken Sandwich with Peach Jam and Brandied Onions Recipe on Food52Balsamic Chicken Sandwich with Peach Jam and Brandied Onions Recipe on Food52This recipe is based on a longing for a Thanksgiving leftovers sandwich. I wanted to use ingredients that represented the summer season, while still embodying homey deliciousness. Luckily, this recipe fulfilled my expectations! The chicken, jam, and onions can be made ahead and eaten cold or at room temperature. My main recommendation is that you eat the sandwich with a cold summer beer.

The Ultimate Tomato Sandwich, With Jammy Eggs & Herby Mayo Recipe on Food52The Ultimate Tomato Sandwich, With Jammy Eggs & Herby Mayo Recipe on Food52The is a recipe for those times when you find the world’s best-looking tomato and you’re so excited to eat it, you don’t even have the patience to close your sandwich before taking a bite. It celebrates heavy-handed mayonnaise application, yolky dregs, and flaky salt. A note on choosing an oil for your mayo: Neutral is my go-to because it never overpowers the herbs or tomatoes, but feel free to substitute in your favorite olive oil if you want to amp up the flavor even more. If your emulsion breaks while preparing your herb mayo, stay cool! Grab another egg yolk and put it in a clean bowl, and beat it together with another teaspoon of lemon juice, and another teaspoon of room-temp water. Drop by drop, add your broken emulsion as you whisk. Once it comes together, continue to whisk as you stream in the rest of the broken emulsion. You’ll have more herb mayo than you need for just one sandwich, which roughly translates to “a very compelling reason to buy another tomato tomorrow.” Maybe even go crazy—buy two.

Spicier Curry Chicken Salad Recipe on Food52Spicier Curry Chicken Salad Recipe on Food52My curried chicken salad is much spicier, thanks to a heaping tablespoon of curry powder and a pinch of cayenne pepper (but adjust according to the spiciness of your curry powder). Lots of crunchy celery goes in (because I love celery), along with halved red grapes for sweetness. To serve, I love to make sandwiches to take to work (or to the park), or I'll pack it in single-serving plastic containers to eat throughout the week in Gem Lettuce cups or just simply on a plate with diced avocado. Whichever way you slice it, it's a pretty darn good solo lunch.

Roasted Tomato Jam Recipe on Food52Roasted Tomato Jam Recipe on Food52This recipe was inspired by the following conversation on Hotline about whether or not you can make jam by roasting it in the oven: http://food52.com/hotline/21260-has-anyone-ever-made-preserves-a-dutch-oven-in-the-oven No stirring? No mess on your stove? No worrying about burning the preserves if you walk away from the stove for a few minutes? I had to try it! Roasting jam delivered on its promises -- I layered sliced tomatoes with sugar and spices in a round braising pan, and let the oven do the rest of the work. I checked on the jam a few times but with the even heat of the oven, there was never any worry that the jam would stick to the pan base. And the edges of the tomatoes on top caramelized a bit. What more could I ask for? Next up: peaches!
