Making the salad is as important a part of the tradition as eating it.
Fred wasn’t cutting his fresh fish into small enough pieces, according to Carol Groos. She good-naturedly demanded he try again, lest the finished salad didn’t meet the high standards their long-gone German ancestors set for “hering salat.”

Getting together to make the salad is as important a part of the tradition as eating it.“Others serve it on Christmas Day or New Year’s,” said Maria, a historian specializing in San Antonio. “It’s usually eaten as an appetizer served on some type of cracker.”
Over the years, it’s become increasingly difficult to find fresh herring. Maria used to buy it from Schilo’s back when it was more of a delicatessen than a restaurant. Later, she shopped at Polunsky’s Seafood until the store went out of business, then H-E-B and Central Market until they stopped carrying it. These days she special orders it from a seafood wholesale supplier.
All the while, the Pfeiffers’ dog, Nikki, waits patiently for an errant piece of fish, rump roast or other goodie to fall to the ground.
