This season's roster kicks off Oct. 1 and includes 17 new food trucks, carts and tents serving a variety of dishes throughout the park that represent some of the best in the Bay Area.
“The tikka masala that we are serving, it's like a very secret family recipe and it has almost like 18 different spices. Those are a mixture of American and Indian spices, and we grind all of our spices with a hand grinder and we use fresh tomatoes, onions, garlic, ginger and jalapeños,” Sharma said. “We cook the chicken in a clay oven, but we marinate first for 24 hours, or at least for two days. ... Once you put those chunks of chicken in the curry, it releases all the flavors.
