We've all been there: You go on a rad vacation to a far-flung country or take a road trip around the Deep South. And you bring yourself back a food souvenir so you can keep the good times rolling at home. Except, that food ends up sitting in the back of your cupboard or taking up room in your fridge door, unused and untouched for months or years. It's got a bit of texture to it and a mellow heat. It's so damn fun to say too. I like it on a sausage biscuit or a boiled hot dog, anything except for chocolate cake—at least when I'm in the South. Back in yankee Brooklyn, it just sits there with its crusty cap that hasn't been opened in months. The hot sauce battle taking place daily in my fridge's door shelf is fierce, and Cacalacky seems to always fall short. It makes me feel like a lousy Southerner.
