For decades, Vikas Bajaj has dreamed of opening his own restaurant, one that would evoke the same joy and surprise he experienced as a child when dined with his father at the Maurya hotel in New Delhi., and the restaurant, he says, set a standard he has had trouble finding in the decades since, working and living in Australia, Singapore and Malaysia.
“I did not want to let life pass by,” he says. “I just gathered the courage to say ‘Hey, we’re going to do it, no matter what comes our way.'” The Dal Tadka at Taj Mahal in Livermore is prepared with four types of lentil cooked in a north Indian style. The restaurant offers dishes made in a tandoor and thoughtful flavor combinations. Bajaj’s favorite menu items include a tandor-cooked lamb starter of seekh kabab starter and the taj paneer makhanwala entree with tomato sauce and fenugreek . For dessert, try the gulab e gulkand , a fried dumpling dipped in saffron sugar syrup and filled with gulkand, a type of rose preserve.
