That's how millions of us will spend our time on Valentine's Day. The irony is that V-Day is a famously bad night to eat out. It is rudely but rightly known as "amateur night." You'll never get the best a restaurant has to give on V-Day. Instead, you'll get filet mignon that was par-cooked 15 hours ago, and mashed potatoes that were made in a pot the size of a bathtub .
So that's one brilliant thing about this Dutch baby: you make it in advance, when nobody's around and you can be very calm. And it's very hard to mess up at this stage. Flour, sugar, eggs, milk, Parm, all that thyme—you whir it in a blender and the whole process takes just a few minutes. Then you put the batter in the fridge, where it waits to be called to duty.
