Nutritional expert Tim Spector, Professor of Genetic Epidemiology at King's College London and the brains behind the Zoe health app, has addressed fears that using touted heart-enhancing 'superfood' olive oil in cooking might lead to cancer. Despite claims of its benefits in combating heart disease, inflammation, and type 2 diabetes, there have been concerns over its use in food preparation.
He added, "They gave you cancer. I think a lot of this stuff probably propagated by the competition, and it turns out that normal levels of cooking you don't really get above about 180 degrees. So that's not really a problem." "So let's say, for example, that you roasted some carrots with extra virgin olive oil it will improve the nutritional content of the carrot, not just decrease the level of polyphenols from the olive oil. So there is an upside, so there's no question that you should be using it to cook with.", reports Gloucestershire Live.
