Wife publishes one of a kind cookbook after husband's 'annoying leg sensation' turned into MS diagnosis
A Lancashire woman has published her very own cookbook, providing recipes for chemotherapy patients and those with low immune systems.
"One of the biggest ones was the food, because what we wanted to do was minimise the risk of food poisoning," Alison told LancsLive. "There's a special diet called the neutropenic diet and that's what he [James] was told to follow when he was out of hospital. When James received his treatment, Alison took time off work to look after her husband and used this time to ensure he was eating the correct, but also tasty and nutritious meals. As a result, Alison who says she's always been a dab hand in the kitchen, found some recipes and inspiration online, but noted that there was conflicting advice from some recipe books.
Alison decided to start a group on Facebook to get ideas from other people and share her own, which eventually turned into a community of around 1.5k members. After liaising with other people and patients in similar situations, Alison decided to create her own cookbook with the recipes suitable for a neutropenic diet.
Run by volunteers, the couple's charity, AIMS, works to raise awareness of the treatment James received, as well as the after care involved when the patient returns home. As part of this, a percentage of the sales of Alison's cookbook, The Neutropenic Cookbook, will go back into the charity.
