Following the approval for a cafe in the city center, the company is eyeing the former Greggs location on Byres Road . Since Greggs relocated to a larger premises, the shop has remained vacant.
Blank Street has submitted plans to the council outlining the interior design of the proposed cafe and is seeking permission to install its signature green signage on the storefront. Emerging in 2020 from the garden of a Brooklyn diner, Blank Street has since embarked on a rapid expansion across the United States and into the United Kingdom. As stated on their website, Blank Street aims to redefine the coffee shop experience by offering a clean, natural, and high-quality menu at affordable prices. They emphasize using fresh, locally sourced ingredients, serving top-tier coffee from around the world, and paying baristas above market wages. Currently, Blank Street operates cafes in London and Manchester, with plans already approved for an Edinburgh location. Glasgow City Council will evaluate the submitted plans in the coming weeks.
