One of the main reasons why The Big Bang Theory became so popular was the chemistry among its cast. Seeing them all navigate their individual and collective arcs for more than a decade was rewarding for many viewers, especially considering everything they went through in the sitcom. Given this, it made sense that they decided to wrap things up instead of continuing without Parsons, who didn't want to do the sitcom past season 12.
